Barrel Fermented Wild Saison Wake Up the Sun is a mixed culture saison fermented and matured in wine barrels. With a foundation of raw wheat plus malted wheat and rye and Pilsner malt, this saison begins with a well rounded and deep grain character. A combination of Brettanomyces, lactobacillus and saison yeast lead to an incredibly fruity and complex palate filled with lemon, papaya, mango and spice.
