Ale with Botanicals Named for a particularly under-appreciated Pink Floyd album (according to Brewmaster Will Meyers) this gruit-style ale has a malt bill of Pale, Munich, and CaraVienne and features locally foraged fruits and herbs. [wpex more="Read more" less="Read less"] Our friend and well-known forager Marcus Ramsden contributed local Japanese and Chinese quinces (Chaenomeles Japonicus) as well as Cornelian cherries (Cornus mas). To balance their bright fruity and tart contribution to the beer we chose to add Sweet Gale, Burdock, Licorice and Roasted Dandelion roots, dried Rosehips and Schizandra berries. Our house Belgian yeast contributes its own spicy phenols and fruity esters, and leaves a very dry and quaffable beer with pleasant acidity, and soft spicy and floral character.
