Peaches en Regalia

American Wild Ale with Peaches This light golden beer was fermented in a quartet of wine barrels historically used for our fruited sour beers. Its base of wheat and Vienna malts provided ample fodder for our resident microflora while aged whole leaf hops offered preservative properties without adding bitterness or hop flavor. [wpex more="Read more" less="Read less"] Over a twelve month fermentation the beer developed tartness and complexity, and last June we added pureed peaches to each of the four barrels. As the fresh fermentation proceeded the sweetness of the peaches diminished, leaving behind the aroma and flavor of the fruit complemented by a very dry palate, soft acidity, and delicate complexity from Brettanomyces, Lactobacillus, and Pediococcus, among countless other “bugs” in the wood. After careful blending, this release from the CBC Barrel Cellar brings fresh summer fruit and refreshing tartness in the midst of New England’s fickle winter. Of course, we’d be remiss in failing to mention that Peaches en Regalia is named after the classic Frank Zappa song, an instrumental jazz fusion track released in 1969 on the album Hot Rats.
