Koyt Pond

Pale Ale with Botanicals Koyt Pond is a collaboration with our friends at Burial Beer Company in Asheville, NC. With a nod to the historical style called Koyt beer indigenous to Holland, over 50% of the fermentables come from British Flaked Oats and British Oat Malt. Additioanlly we brewed with local MA-grown and -malted wheat from our friendly micromaltsters at Valley Malt in Hadley, MA, plus North American 2row barley malt. [wpex more="Read more" less="Read less"] Koyt beers were once assumed to have been gruit beers – unhopped herbal beers with a wide variety of botanicals added to flavor and preserve the beer. Recent historical data appears to show that these were often hopped beers as well. KOYT POND references the early unhopped beers through our use of Wormwood, Roasted Chicory, Roasted Dandelion, Borage, Coriander, Grains of Paradise, Heather Tips and Spruce Tips. While the sheer number of botanicals used would imply that this beer has a strong herbal flavor, our deft hand with these ingredients allows it to present as light on the palate and very easy-drinking - an English Pale Mild ale flavored with a very subtle hint of herbs and spices instead of hops.
