Barrel-fermented 100% Brettanomyces Sour Ale
Returning to our limited- release series of beers fermented with wild yeasts, CBC’s house beer Regatta Golden undergoes a transformation via barrel fermentation with 2 unique strains of Brettanomyces yeast. Brett. bruxellensis drei and Brett. custercianus offer amazing tropical fruit notes of pineapple, passion fruit, and guava to this refreshing light beer. This expression of Jack Straw is hazy golden, with a bracingly tart edge rounded out by bright fruit and spritzy effervescence. The wort (unfermented beer) production was consistent with our house Golden ale but all fermentation took place in oak barrels in the CBC Barrel Cellar. These barrels had been intentionally inoculated with these two Brett. strains, allowing the simple change in yeast to highlight just how remarkably different the resulting beer is.
